VEGAN GLUTEN FREE PEANUT BUTTER COOKIES 纯素无麸质花生奶油饼干

Recently I am so into baking cookies. Yeah..I love munching on cookies... :p
Therefore i searched high and low for some good recipes and eventually I found one gluten free version online. Nowadays I am cutting down on the intake of gluten due to stomach bloating and I try baking with gluten free flour if possible. Currently I am using ORGRAN all purpose flour in baking cookies , cupcakes and making waffle or pancake.

最近我迷上了烘焙饼干。嗯,我喜欢咀嚼饼干。。:p
因此我在网上努力的寻找饼干食谱,皇天不负馋嘴人,我终于找到了一款无麸质饼干食谱。最近因为腹胀问题,我开始减少食用含有麸质的食品,所以烘焙时我都尽量使用无麸质的烘焙粉。我现在用的是 ORGRAN all purpose flour ,它可以用在烘焙饼干,蛋糕以及做松饼。

I bought one tasty vegan peanut butter jam recently . It contains chopped peanuts and it's really crunchy. Therefore I decided to make peanut butter cookies using it.
最近我买了一罐不错吃的纯素花生奶油酱。 里面有花生粒,咬起来很好吃。 所以我决定用它来做饼干。

RECIPE FOR VEGAN GLUTEN FREE PEANUT BUTTER COOKIES 纯素无麸质花生奶油饼干食谱


1 cup gluten free all purpose flour  杯无麸质面粉
1/4 teaspoon baking soda 茶匙苏打粉
1/8 teaspoon salt 茶匙盐
1/3 cup creamy peanut butter 杯花生奶油酱
2 tablespoon grape seed oil 汤匙葡萄籽油
3 tablespoon agave nectar 汤匙龙舌兰糖浆

STEPS 步骤 

1) Preheat oven to 180°C . 预热烤箱至180°C 
2)Mix all ingredients well and form a dough. Use cookies cutter to cut cookie shapes. 把所有材料搅拌均匀,然后捏成面团。用饼干模具来塑造饼干形状。
3)Bake 15 minutes till edges are golden . 烘焙15分钟至饼干成金黄色。

I love munching on them! It's a bit sweet so I think I should reduce the usage of agave nectar next time. 我很喜欢这饼干! 不过有点甜,下次我要减少糖浆的用量。

Vegan Oatmeal Cookies 纯素燕麦饼干

Actually I had searched for several vegan cookies recipes and I tried baking some cookies but failed to make crispy vegan cookies. Eventually I got this recipe and I modified part of it, the baked cookies are crispy and quite tasty ( according to my friends :p).

其实我曾寻找过几个纯素饼干的食谱并试做过一些,可是一直无法成功烘焙出香脆口感的饼干。最后我终于得到这食谱并小改了一下,烘焙出来的饼干是香脆和不错吃的。(我朋友说的 :p)。

Recipe食谱
Grape seed oil 葡萄籽油                      50g
Brown Sugar 黄糖                              30g
Oatmeal 燕麦片                                 50g
Water 水                                           20g
Baking soda 苏打粉                           1/8 teaspoon茶匙
Wholemeal flour全麦面粉                   75g
Almond / Raisin  杏仁片/葡萄干        1/2 cup杯

1)Wash and clean the raisin / Chop the almond into small pieces. 把葡萄干清洗干净/ 把杏仁搅成小块。

2)Mix sugar and oil in a bowl. 把糖和油放入碗里搅拌。

3)Add water into the bowl and mix evenly. 加水入碗里并搅拌均匀。

4)Pour oatmeal into the bowl and mix all ingredients together. 把燕麦片倒入碗里并搅拌均匀。

5)Sift wholemeal flour and baking soda, pour them into the bowl and mix evenly. 把全麦面粉和苏打粉过筛然后倒入碗里搅拌均匀。

6)Add raisin / almond and mix all ingredients together. 加入葡萄干/ 杏仁粒然后搅拌。

7)Preheat the oven at 180°C and bake for 25 minutes. 把烤箱预热于180°C,烘焙25分钟。

Vegan Bread Pizza 纯素面包披萨

喜欢上烘焙后,我也渐渐学习着尝试做不同的料理。因为我不吃蛋奶,所以想到要做用到起司的料理时就有点头痛。

后来在网上又偷师(呵呵。。),终于自己做了纯素腰果豆酪。虽然味道不会像真正的起司那样,可是也算健康吧。口味重者可能就不会喜欢这简单的豆酪。:p

Ever since I am obsessed wth baking , I start learning to bake different baked goods. I am facing problem whenever I think of baking any food which require the use of cheese, because I am converting to a vegan diet.

After studying several recipes online, I finally made vegan cashew cheese myself. It doesn't really taste like the real cheese but I think it's considered healthy to be consumed. However I think this type of vegan cheese might not be a good choice for those picky eaters. :p
自制腰果豆酪 homemade vegan cashew cheese
Vegan Cashew Cheese Recipe 纯素腰果豆酪

1 cup cashew soaked 12-24 hours   1杯腰果( 浸泡12-24小时 )
2 teaspoon lemon juice                    2茶匙柠檬汁
1/2 teaspoon salt                              1/2茶匙盐
some pepper /other seasoning          胡椒粉/其他调味料适量
1/4 cup water                                    1/4杯水

Mix all above ingredients in a food processor/ blender till well blended. 以上材料放入搅拌器直到搅拌均匀。

我在面包涂上番茄酱,然后铺上蘑菇,番茄。你也可以随意加入自己喜欢的食材,比如灯笼椒,杂豆等等。最后我把腰果豆酪铺在上面。      I put tomato sauce on the bread, followed by mushroom, tomato. U can add some other ingredients according to your preferences eg bell pepper or mixed vegetables etc. Lastly i put my homemade vegan cashew cheese on top of it.
 Bake the bread in the oven at 180°C for 20-30 minutes.   把面包放入烤箱内,180°C 烘烤20-30分钟。
 

P/S : U can use basil sauce / barbecue sauce/ other sauce as a base too. 你也可以用其他酱料,比如九层塔/沙茶酱或其他酱料,将其涂在面包上。

First Vegan baking - Vegan Chocolate Cupcakes 纯素烘焙初体验之纯素巧克力杯子蛋糕

I am a newbie in baking.我是烘焙界菜鸟 ^^

今年5月我才开始学习烘焙,经过我上网研究和偷师后,我就下定决心来个烘焙初体验。

话说工欲善其事,必先利其器,我到烘焙店和电器店走了一趟,买了Oven( 用了2次就坏了,幸好under warranty,换了一个新的 =.='' ) 和一些烘焙用具与材料。
 
准备就绪,我开始人生第一次的烘焙,做了无蛋奶巧克力杯子蛋糕。(以下照片可能有点。。。你们就将就一点吧,小女第一次烘焙啊。。。哈哈)


第一次烘焙,笨手笨脚的,弄到脏兮兮,而且很像倒太多份量了。。。
这成品真像火山爆发,哈哈! 我在上面撒了防潮糖霜 。这卖相虽然不行,可是味道还不错。(啊,不是我说的,我朋友说的^^)

 经过上次的教训,我下定决心,下一次要把蛋糕做得美一点。。。所以我在多一个礼拜后,再次挑战同样口味的杯子蛋糕。
这次还行吧?

因为刚好是母亲节,我特地做了拿回家乡的。这次我在蛋糕上面加了自制无蛋奶巧克力糖霜。

这是最近的作品^^

虽然我做的杯子蛋糕味道不如外面卖的好吃,可是我用的材料80%是采用有机的,而且无添加香精,最重要的是它是无蛋奶的,适合纯素者。在次我与大家分享我的食谱(我也是偷师来的,所以大家互相学习,互相切磋,请多多指教!)。

RECIPE FOR VEGAN CHOCOLATE CUPCAKES 纯素巧克力杯子蛋糕食谱:

1 1/2 cup low protein flour 杯低筋面粉
1/2  cup sugar 杯糖
3 tablespoons pure cocoa powder 汤匙纯可可
2 teaspoons coffee powder 茶匙咖啡
1 teaspoon soda 茶匙苏打
1/2teaspoon salt 茶匙盐
1teaspoon vinegar 茶匙醋
1/4 cup grapeseed oil 杯葡萄籽油
1 cuo water杯水


制作步骤
1) 把烘炉提早弄热至 180°C /350 °F 。
    Preheat the oven to 180°C /350 °F.
2) 把面粉 ,糖,可可粉,咖啡粉,苏打粉和盐一起过筛。
    Sift the flour, sugar, cocoa powder,coffee powder, soda and salt together.
3)加入醋,油和水,全部材料一起搅拌至均匀。
   Add the vinegar, oil and water. Mix all ingredients till well combined.
4)把搅拌好的糊倒入纸杯中(3/4分满)。
   Pour the batter into the baking cups about 3/4 full.
5)烘焙 20-25分钟左右,您可以把蛋糕测试棒插入蛋糕内测试,如果拿出来时是不粘着蛋糕的,那就大功告成了。
  Bake for 20-25 minutes until a cake tester inserted into the center comes out clean.


RECIPE FOR VEGAN CHOCOLATE FROSTING纯素巧克力糖霜 

1 cup sugar 杯糖
6 tablesppons corn starch 汤匙玉米粉 
4tablespoons pure cocoa powder 汤匙纯可可粉
1/2 teaspoon salt 茶匙盐 
2 tablespoon oil汤匙油 
1 cup water 杯水

小贴士 TIPS 
1)苏打粉会和酸性材料起化学反应,比如醋和可可粉。这会导致即刻性的化学反应,在烘炉里,热气会导致二氧化碳被释放,杯子蛋糕会膨胀,这会使烘焙蛋糕上升,起到松软的作用。所以醋和可可粉要放到最后,免得过早与苏打粉起化学反应。,减少蛋糕的上升度。
Baking soda reacts with the acidic ingredients in batter eg cocoa, and vinegar. This causes a an instant reaction and when the batter is put in the oven, the heat causes carbon dioxide to release, causing expansion in the batter, giving it a rise and lending a tender, light texture to cakes.
Because the reaction of baking soda and the acidic ingredients starts immediately, you should not dawdle too long with the batter  before you put the cupcakes in the oven. Therefore you should add vinegar and cocoa at last to prevent early reaction between them and baking soda. Otherwise it may reduce the lift of your baked cupcakes.

 2)咖啡粉是用来提升巧克力的香味,加入咖啡粉后并不会有咖啡味,如果没咖啡粉可以用水。 
Coffee powder can enhance the flavor of the chocolate, but you won't be able to taste the flavor of coffee after adding it into the cupcakes .If you don't have coffee powder in hand,  you can always replace it with water.
